Beef Kabobs

It’s been a long week!  Fire up the grill for a healthy and delicious dinner!  Beef Kabobs are just what you need on this Friday night! 

1 Protein
2 Vegetables

Juice from 1 Orange
1 tbs. Splenda Brown Sugar
1/4 tsp. Ground Ginger
1 serving of Sirloin Steak, cut into 1 inch pieces
1 serving Zucchini or Yellow Squash, cut into 1 inch pieces
1 serving Green Pepper, cut into 1 inch squares

Combine first 3 ingredients. Marinate beef 1 hour. Alternate beef and vegetables on skewer. Broil 4 inches from heat for about 8 minutes or until your liking. Also great on the grill!

Herb Ice Cubes

Looking for a way to add flavor to your beverages or an easy way to add flavor to your next meal?  Try adding fresh herb ice cubes!

Freezing is a simple and excellent way to preserve fresh herbs.  Freezing herbs makes it easy to always have fresh herbs on hand to use in cooking meals and for beverages.  If a recipe calls for broth, instead use plain water mixed with fresh herbs and spices to avoid extra sodium.  You can also toss pre-made herb ice cubes into sauces and soups if broth is called for or if you want to add extra flavor.

To Make Herb Ice Cubes:

Wash herb(s) of choice gently and dry.  Mince herb(s) by hand or in a food processor.  Place minced herb(s) into ice cube tray (about 2 Tbsp. per cube), filling each cube about 3/4 full.  Fill tray with boiling water (this will blanch the herbs, helping them retain their fresh flavor and color), then freeze.  Once frozen, place cubes in freezer bags and store.  When ready to use, just simply drop in an ice cube while cooking!

1 3/4 Vegetables
1 Starch
*Suitable for Fast Track Patients


Juice from 1 Fresh Lime
2 tsp. Apple Cider Vinegar
1/4 tsp. Chili Powder
1/8 tsp. Cumin
1/8 tsp. Fresh Garlic, minced
1 tsp. Fresh Parsley, chopped
1/8 tsp. Thyme

1/4 cup Fresh Baby Arugula
1/4 cup Zucchini, oven roasted
1/4 cup Quinoa, cooked
2 Tbsp. Cilantro, divided, chopped
5 Cherry or Grape Tomatoes, halved and oven dried, 30 minutes


All the ingredients together in a medium bowl.

In the dressing bowl, lightly mix together the cooked quinoa and dressing. Add in cilantro, tomatoes and the oven roasted veggies. Toss all ingredients together. Place on chilled salad bowl and enjoy.

Healthy Popsicle Recipes

Frozen Yogurt Pops
Freedom Meal Plans ONLY

1 Dairy
1 Fruit

6 oz. Plain, Low-Fat Yogurt
2/3 cup Mixed Berries (Blueberries, Blackberries, Raspberries), frozen

Puree all ingredients in a blender. Divide evenly between paper cups. Cover with aluminum foil and pierce foil in the center with popsicle sticks to hold sticks in place. Freeze 4-5 hours or until solid.  Enjoy!

14 medium, seedless Grapes (Red Grapes recommended)
1/4 cup Water

Wash grapes and blend in blender until smooth.  Pour into popsicle molds, freeze until hard, and enjoy!

Spicy Watermelon Pops

1 Fruit
1 Vegetable

1 cup Watermelon
1/2 small Tomato, peeled
1/4 medium Jalapeno Pepper, peeled and seeded, thinly sliced
1/4 cup Water

Puree watermelon and tomatoes together.  Add jalapeno to the puree and refrigerate for 1 hour.  Pour puree into popsicle molds and freeze.

Lime Green Popsicles

1 Fruit
1 Vegetable

1 cup fresh Spinach, chopped
1 small Green Apple
1/4 cup Water
Juice from 1 Lime

Puree ingredients together in a blender.  Pour into popsicle molds and freeze.

Can Step Counts Predict Obesity?

Did you know that smart phones could soon be a way for researchers to predict obesity rates across the world?

In a recent study published in the journal Nature, Stanford researchers worked with the mobile health company Azumio (which specializes in biometric mobile technology) to see if step counting on your mobile device could help to predict a country’s obesity level. The study tracked physical activity by population in more than 100 countries and looked at smartphone users’ age, gender, height and weight.  The study showed that in the United States, which has a greater obesity population, that there is a gap in the activity levels of men versus women. In countries with a small obesity population, men and women’s activity levels were ranked more closely.

Individuals who are active daily, taking more steps, are less likely to suffer from obesity. Individuals who are sedentary, taking less steps daily, are part of populations that have a greater risk factor of becoming overweight. One way to use this data is for city planning.  In cities and towns that have paths, walkways, parks, and less vehicle usage, the population is likely to count more steps and men and women activity levels will be closer to each other.

There are lots of ways to track your steps, FitBits, free smart phone apps, pedometers, etc. These devices will hold you accountable to yourself and challenge you daily to take more steps. Set goals for yourself at the beginning of each day. To help get your goal steps in each day, park farther away from work so you have to walk farther, take stairs instead of the elevator, and commit to a walk every day for 20 minutes on your lunch break, even if it is walking laps around the building. Focus on a healthier you.
