Chocolate Mint Fudge

National Chocolate Mint Day is here!  This Chocolate Mint Fudge recipe will satisfy your cravings!

Servings:
1 Nutritional Supplement
1 Bar

Ingredients:
1 Chocolate Mint Pudding Shake Nutritional Supplement
4 oz. Water
1 Chocolate Mint Bar, melted

Preparation:
Cut snack bar into small pieces and add 2 oz. water, microwave 2 minutes, stir, microwave an additional 2 minutes. Add dry chocolate pudding shake supplement and just enough water to make a very thick batter. Blend until creamy and refrigerate overnight.

Cabbage Wrapped Beef Shumai

It’s National Cabbage Day!  It’s the perfect time to try out a new Cabbage recipe before St. Patrick’s Day.  Our Cabbage Wrapped Beef Shumai is packed with flavor and sure to be a hit!

Servings:
1 Protein
2 Vegetables
Suitable for Fast Track Patients

Ingredients:
1 cup Cabbage Leaves
1 serving Ground Beef
1/2 cup Zucchini, shredded and pressed free of excess liquid
2 Green Onions, root removed and minced
1 tsp. fresh grated Ginger
1/4 tsp. Salt-Free Chinese Five Spice Blend

Preparation:
Place the cabbage leaves in a pot, fill it with warm water, and bring it to a boil. Turn heat down to a low boil with lid still on and continue cooking until leaves become soft. Place leaves in a colander, rinse with cook water, and use either towels or a salad spinner to get rid of excess water.

Combine the remaining ingredients in a medium bowl and mix until well combined. Layer a bamboo steamer with a circle of parchment paper or a plate. Then, place a leaf in your hand molding it into a cup-like shape. Fill the middle with the beef mixture. Press into the meat as you close up the cabbage leaf so they stick to each other, folding the top edges together like a gathered coin purse. Nestle it in the bamboo steamer. Continue until all of the meat mixture has been used. Fill the bottom of your wok with water and place steamer into the wok (it should not be touching the shumai). Bring the water to a simmer and cook until beef is fully cooked, 25 minutes.

Erika’s Cherry Lemon Pudding Tart

Servings:
1 Fruit
1 Nutritional Supplement
1 Bar
1 Fiber
Suitable for Fast Track Patients

Ingredients:
1 MWLC Tangy Lemon Pudding Nutritional Supplement
1 MWLC Cherry Jello Fiber
9 medium fresh Cherries, mashed
1 MWLC Lemon Meringue Bar, crumbled

Preparation:
Prepare the cherry jello per the instructions on the packet and pour jello mixture into the bottom of a small glass pan. Once refrigerated as directed and the jello has set, prepare the tangy lemon pudding per the instructions on the packet and spread the pudding evenly over top of the jello. In a small mixing bowl, take a fork and mash the cherries for about 5 minutes. Take the mushed cherries and the juice and gently cover the entire top of the pudding. Lastly, take the lemon meringue bar crumbles and spread them evenly across the top of the cherries. Enjoy!

National Hot Breakfast Month

February is National Hot Breakfast Month.  Kick start your day with one of these hot breakfast recipes!  Egg White and Vegetable Frittata, Turkey Quiche or Egg in a Basket anyone?

Servings:
1 Protein
1 Vegetable
1 Starch
Suitable for Fast Track Patients

Ingredients:
Unflavored Cooking Spray
1 slice Diet Bread (with a hole cut out of the center)
1/2 cup Mushrooms (sliced)
1 portion Egg Beaters
1 Garlic Clove (minced)
1/2 tsp. of fresh chopped Thyme
I Can’t It’s Not Butter Spray

Preparation:
Spray a skillet with unflavored cooking spray. Add mushrooms and sauté over medium heat until tender. Stir in thyme and minced garlic cook for 30 seconds, and set aside. Spray each side of diet bread with 2 ½ squirts of I Can’t Believe It’s Not Butter Spray. Lightly spray another skillet with unflavored cooking spray. Add the bread, pour the egg beaters and mushroom mixture into the hole in the bread and cook over low heat for 5 minutes, flip the bread and cook the other side until egg mixture is done.

Betty’s Chicken Lemon Rice Soup

National Homemade Soup Day is here!  Have you tried MWLC patient Betty’s Chicken Lemon Rice Soup?

Servings:
1 Protein
2 Vegetables
1 Starch
Suitable for Fast Track Patients

Ingredients:
1 serving Chicken, cut into bite size pieces
1/2 medium Onion, cut into pieces
1/2 cup Zucchini, cut into pieces
1/2 cup Broccoli, bite size pieces
(You can add or delete whatever veggies you would like)
1 MWLC Fiber Fulfill Chicken Bouillon
Mrs. Dash’s Chicken Spice, to taste
Mrs. Dash’s Lemon Pepper Spice, to taste
(Add any other spices you wish)
1 cup Water
Juice of 2 fresh lemons
1/4 cup Wild Rice, cooked

Preparation:
Place chicken in a casserole dish, layer veggies on top. Sprinkle with bouillon, and any other spices. Add water, and fresh lemon juice. Cook in 350* oven 45-60 mins. Place rice in large bowl, spoon soup out of casserole dish on top. Enjoy!

Medical Weight Loss Clinic goes RED!  Betty Boop is helping educate about the signs of stroke – F.A.S.T. #goredmi

What does this mean?

Signs that you may be having a stroke from www.goredwomen.org:

  1. Sudden numbness or weakness of the face, arm or leg, especially on one side of the body
  2. Sudden confusion, trouble speaking or understanding
  3. Sudden trouble seeing or blurred vision in one or both eyes
  4. Sudden trouble walking, dizziness, loss of balance or coordination
  5. Sudden severe headache with no known cause

You should never wait more than five minutes to dial 9-1-1 if you experience even one of the signs above. Remember, you could be having a stroke even if you’re not experiencing all of the symptoms. And remember to check the time. The responding emergency medical technician or ER nurse at the hospital will need to know when the first symptom occurred.

National Wear Red Day 2018

Today, Friday, February 2nd, 2018 is the American Heart Association‘s ‘National Wear Red Day‘!  Medical Weight Loss Clinic encourages our patients to join us by participating in ‘National Wear Red Day’, to promote education about heart disease, stroke, and living a healthy lifestyle.

You can ‘Go Red‘ by eating a healthy diet, following an exercise routine, visiting your doctor for regular health tests, and influencing others by talking about heart health.

Cinnamon Vanilla Lemon Pie

Looking for something sweet?  Try our Cinnamon Vanilla Lemon Pie recipe!

Servings:
2 Nutritional Supplements
1 Bar

Ingredients:
1 MWLC Tangy Lemon Pudding Nutritional Supplement
1 MWLC Cinnamon Vanilla Cereal Nutritional Supplement, crushed
1 MWLC Lemon Meringue Bar, melted
Water

Preparation:
Place the lemon bar into a glass dish with 2-3 ounces of water. Microwave the bar and water for one minute, until soft. Stir the bar into the water and mix until they become a thick liquid. Add a smidge more water if needed. Crush the cinnamon vanilla cereal while it is in its package. Take 3/4 of the bag of cereal and mix it into the liquefied bar. Place the mixture into a pie slice dish. Create the lemon pudding per the instructions on the package and spread over top of the bar and cereal mixture. Place the rest of the cinnamon cereal crumbles onto the top of the pudding.
