Strawberry Jello Cake

Celebrate National Strawberry Day with a light yet sweet treat!  Strawberry Jello Cake!

Servings:
1 Fruit
2 Nutritional Supplements
1 Fiber

Ingredients:
1 MWLC Pancake Nutritional Supplement
1 MWLC Cherry Jello Fiber
1 MWLC Vanilla Pudding Shake Nutritional Supplement
1 serving Fresh Strawberries
Water

Preparation:
Mix 1 pancake nutritional supplement with 2 oz. water and microwave for 2 minutes. Use a fork to poke holes throughout the cake that forms. In separate bowl, mix 1 cherry jello fiber with 2 oz. of hot water, mix, then pour over pancake mixture. Place in fridge to cool. Mix 4 oz. water and vanilla supplement and pour over cake as frosting. Top with chopped fresh strawberries.

Chocolate Mint Fudge

Servings:
1 Nutritional Supplement
1 Bar

Ingredients:
1 Chocolate Mint Pudding Shake Nutritional Supplement
4 oz. Water
1 Chocolate Mint Bar, melted

Preparation:
Cut snack bar into small pieces and add 2 oz. water, microwave 2 minutes, stir, microwave an additional 2 minutes. Add dry chocolate pudding shake supplement and just enough water to make a very thick batter. Blend until creamy and refrigerate overnight.

Cabbage Wrapped Beef Shumai

It’s National Cabbage Day!  It’s the perfect time to try out a new Cabbage recipe before St. Patrick’s Day.  Our Cabbage Wrapped Beef Shumai is packed with flavor and sure to be a hit!

Servings:
1 Protein
2 Vegetables
Suitable for Fast Track Patients

Ingredients:
1 cup Cabbage Leaves
1 serving Ground Beef
1/2 cup Zucchini, shredded and pressed free of excess liquid
2 Green Onions, root removed and minced
1 tsp. fresh grated Ginger
1/4 tsp. Salt-Free Chinese Five Spice Blend

Preparation:
Place the cabbage leaves in a pot, fill it with warm water, and bring it to a boil. Turn heat down to a low boil with lid still on and continue cooking until leaves become soft. Place leaves in a colander, rinse with cook water, and use either towels or a salad spinner to get rid of excess water.

Combine the remaining ingredients in a medium bowl and mix until well combined. Layer a bamboo steamer with a circle of parchment paper or a plate. Then, place a leaf in your hand molding it into a cup-like shape. Fill the middle with the beef mixture. Press into the meat as you close up the cabbage leaf so they stick to each other, folding the top edges together like a gathered coin purse. Nestle it in the bamboo steamer. Continue until all of the meat mixture has been used. Fill the bottom of your wok with water and place steamer into the wok (it should not be touching the shumai). Bring the water to a simmer and cook until beef is fully cooked, 25 minutes.

Erika’s Cherry Lemon Pudding Tart

Servings:
1 Fruit
1 Nutritional Supplement
1 Bar
1 Fiber
Suitable for Fast Track Patients

Ingredients:
1 MWLC Tangy Lemon Pudding Nutritional Supplement
1 MWLC Cherry Jello Fiber
9 medium fresh Cherries, mashed
1 MWLC Lemon Meringue Bar, crumbled

Preparation:
Prepare the cherry jello per the instructions on the packet and pour jello mixture into the bottom of a small glass pan. Once refrigerated as directed and the jello has set, prepare the tangy lemon pudding per the instructions on the packet and spread the pudding evenly over top of the jello. In a small mixing bowl, take a fork and mash the cherries for about 5 minutes. Take the mushed cherries and the juice and gently cover the entire top of the pudding. Lastly, take the lemon meringue bar crumbles and spread them evenly across the top of the cherries. Enjoy!

National Hot Breakfast Month & Egg Month

February is National Hot Breakfast Month.  May is also National Egg Month. Kick start your day with one of these hot breakfast recipes!  Egg White and Vegetable Frittata, Turkey Quiche or Egg in a Basket anyone?

Servings:
1 Protein
1 Vegetable
1 Starch
Suitable for Fast Track Patients

Ingredients:
Unflavored Cooking Spray
1 slice Diet Bread (with a hole cut out of the center)
1/2 cup Mushrooms (sliced)
1 portion Egg Beaters
1 Garlic Clove (minced)
1/2 tsp. of fresh chopped Thyme
I Can’t It’s Not Butter Spray

Preparation:
Spray a skillet with unflavored cooking spray. Add mushrooms and sauté over medium heat until tender. Stir in thyme and minced garlic cook for 30 seconds, and set aside. Spray each side of diet bread with 2 ½ squirts of I Can’t Believe It’s Not Butter Spray. Lightly spray another skillet with unflavored cooking spray. Add the bread, pour the egg beaters and mushroom mixture into the hole in the bread and cook over low heat for 5 minutes, flip the bread and cook the other side until egg mixture is done.
