Strawberry Cream Pie

Servings:
1 Fruit
1 Nutrient
1 Supplement

Suitable for Fast Track Patients

Ingredients:
Pie Crust:
1 Cinnamon Vanilla Cereal Nutritional Supplement
1-2 Egg Whites

Pie Filling:
1 serving Strawberries
1 Strawberry Pudding Shake Nutritional Supplement, prepared as pudding

Preparation:
Pie Crust:
Crush Cinnamon Vanilla Cereal and mix with egg white. Place mixture in a small muffin tin or baking cup. Bake for 10 minutes at 350 degrees.

Pie Filling:
In a blender, blend strawberries and prepared strawberry pudding. Spread mixture on pie crust, chill and serve.

Wild Rice Vegetable Stuffing

Servings:
1 Vegetable
1 Starch

Suitable for Fast Track Patients

Ingredients:
1/4 cup Wild Rice, cooked
1/4 cup Celery, chopped
1/4 cup Mushrooms, sliced
1/4 medium Onion, diced
1 tsp. fresh Thyme
1/8 cup fresh Parsley, chopped
1/4 tsp. ground Sage
Black Pepper, to taste
Unflavored Cooking Spray

Preparation:
Cook your wild rice according to package directions. Spray a skillet with unflavored cooking spray place the celery, mushrooms and onion in the skillet. Cook until veggies begin to soften. Add the seasonings and cook a few more minutes. Stir in your cooked wild rice and serve.

Apple Pie Pancakes

Apple Pie Pancakes

Servings:
1 Fruit
1 Nutrient

Ingredients:
1 small Apple (peeled and thinly sliced)
I Can’t Believe It’s Not Butter Spray
1 packet Brown Sugar Splenda
1 packet Splenda or any sugar substitute
1/2 tsp. Lemon Zest (grated)
1/2 tsp. Cinnamon
1/2 tsp. Vanilla Extract
1 MWLC Pancake Nutritional Supplement

Preparation:
Spray bottom of a skillet with 5 sprays of I Can’t Believe It’s Not Butter spray, stir in the sliced apples stirring occasionally and cook for 5 minutes or until tender. Mix in brown sugar Splenda, lemon zest and cinnamon. Turn off heat leave skillet on burner. Mix MWLC Pancake Nutritional Supplement with 1.7 ounces of water stirring until batter consistency. Stir in packet of Splenda, vanilla and nutmeg.
Preheat oven to 400. Transfer apple mixture into an 8” nonstick round cake pan, pour the pancake batter over the apples. Do not stir. Bake for 15-20 minutes or until toothpick inserted in the middle comes out clean. Let cool for 5 minutes. Enjoy!

Mushroom Beef and Broccoli

Servings:
1 Protein
1.5 Vegetables
1 Starch
1 Nutrient
Suitable for Fast Track Patients

Ingredients:
1 portion of Boneless Chuck Roast, cut in slices
1 cup Broccoli
1 Clove Garlic
1/4 medium Onion, diced
1 MWLC Mushroom Soup Nutritional Supplement
1 packet MWLC Italian Dressing
1/4 cup Long Grain Brown Rice
4 Tbsp. Water

Preparation:
Whisk together MWLC Mushroom Soup, MWLC Italian Dressing, water, onion and garlic into the crock pot. Place slices of beef in the liquid and toss to coat. Cover with lid and cook on low heat for 5 hours. Add the broccoli over the beef and sauce. Gently stir to combine. Cover with lid and cook 30 minutes to cook broccoli. Make the rice according to the package and serve meat and broccoli over warm rice.

Ingredients:
1 packet MWLC Proticcino Nutritional Supplement
1 packet MWLC Pumpkin Pie Pudding Shake Nutritional Supplement (Product available seasonally only)
12 oz. Water

Preparation:
Pour 12 oz. water in a large microwave mug, heat in microwave until water is hot 1-2 minutes. Pour in 1 packet of MWLC Proticcino and 1 packet of MWLC Pumpkin Pie Pudding/Shake and stir until mixed well together.

Pumpkin Spice Latte

Servings:
1 Dairy
1 Supplement

Ingredients:
1 cup Milk
1 packet MWLC Pumpkin Pie Pudding Shake Nutritional Supplement (Product available seasonally only)
1 tsp. Vanilla Extract
1/4 tsp. Cinnamon,
1/2 cup strong hot Coffee

Preparation:
Combine the milk, pumpkin pudding, cinnamon and vanilla in a medium sauce pan, heat until the milk is hot, 1 to 2 minutes. Whisk vigorously until the milk mixture is foamy, about 30 seconds.

Pour coffee into a large mug, add the milk mixture and sprinkle with cinnamon.
