Kimberly Hornbuckle joined Medical Weight Loss Clinic in March 2023 with a renewed dedication to her health – and some creative cooking tricks up her sleeve.
She battled breast cancer last year – and is currently in remission. “With having breast cancer, it gives me a different outlook,” she says.
Last spring, she set a goal to lose 100 pounds. And she’s well on her way - more than 31 pounds down.
Along the way, she’s already made huge changes to a healthy lifestyle. Though Kimberly admits the idea of avoiding salt and sugar on her program seemed tough at first – she’s created a plan that keeps her on track. Already, her cholesterol is in a healthy range and her doctor has eliminated one of her blood pressure medications.
Kimberly is eager to see her weight continue to drop and her health improve. In the meantime, she’s seeing some other benefits, too.
“I noticed my skin is so soft now!” she says. “I am able to move better. And when I wake up in the morning, I am not tired. I am popping right out of bed. I feel more healthy and energized.”

“She really amazed me with some of her ideas to use our products to vary her cooking and really leans into the air fryer,” says Sigrid Peterson, regional manager at Medical Weight Loss Clinic. “She uses our supplements for seasonings.”
Kimberly has created a system that works to save her time. She often shops for groceries early on Saturday mornings and preps her food and vegetables right away, for the week. She’ll divide up proteins – like chicken breast – into separate packets and season them a special way.
“I take the Medical Weight Loss Clinic Vegetarian Sloppy Joe supplement and put it in a coffee grinder,” she adds.
This allows her to grind it down to a finer seasoning. She uses it on many of her proteins during the week. Then, she freezes the individual servings until she needs to cook and eat them. Kimberly also chops vegetables and portions out her fruit into separate small bags – making it easy to grab and go straight from the refrigerator.
When it comes to her morning coffee, Kimberly found a way to incorporate the Medical Weight Loss Clinic Chocolate Hazelnut Pudding Shake supplement to make a delicious treat. She pours coffee straight over a serving of the supplement in a measuring cup, then combines it thoroughly with a handheld frothing wand. Then she pours it right into her favorite travel mug.
“It’s hard to eat right,” said Kimberly. “But it’s not hard if you come up with a game plan.”
If she’s got a secret weapon, it would have to be the air fryer in her kitchen. Kimberly says she uses it to cook nearly everything on the program. Those seasoned chicken breasts get wrapped in aluminum foil with peppers and onions tossed right into the air fryer at about 340 degrees. She cooks the packets on a lower setting for longer to get a perfect result.
Kimberly admits the first time she tried using an air fryer she wasn’t a fan. But now, it’s her go-to method to save time and stick to a healthy program. She also uses steamer bags right in the microwave to cook vegetables.
“I’m just going to continue my program until I get to my 100-pound goal,” she said.
