Bell Pepper Bites


1 Protein
2 Vegetables

Suitable for Fast Track Patients

1/2 Medium Green Bell Pepper
1/2 Medium Red Bell Pepper
1 tsp. Fresh Lemon Juice
4 oz. Cottage Cheese
1 tsp. Mrs. Dash Lemon Pepper Seasoning Blend

Slice peppers into bite-size pieces and arrange the pieces with the skin side down on plate. In a medium mixing bowl, beat the cottage cheese, Mrs. Dash Lemon Pepper Seasoning Blend, and lemon juice with an electric mixer for 1-2 minutes, or until creamy.

Spoon the mixture onto the pepper pieces. Garnish with your favorite herb and enjoy!
