Fajita Rice

Ingredients:
¼ medium Green Pepper, chopped
1 small Tomato, chopped
¼ medium Onion, thinly sliced
1 Tbsp Dash Extra Spicy Seasoning Blend
1 MWLC Chicken Bouillon Fiber Fulfill, prepared
Unflavored Non-Stick Cooking Spray
1 Tbsp juice from a fresh Lime
¼ cup Long Grain Brown Rice (cooked)

 

 

Preparation:

Preheat a sauce pan and coat with unflavored non-stick cooking spray.  Add onion and sautee about 2 minute, then add rice and cook for an additional 2 minutes.

Add the prepared chicken bouillon, Dash Extra Spicy Seasoning Blend and lime juice.  Mix and simmer with a cover for 15 minutes.

Add tomatoes and green pepper, then simmer for an additional 5 minutes or until rice is tender and liquid is absorbed.
