Fall Harvest Salad

1.5 Vegetables
1 Fruit

Suitable for all Freedom and FastTrack meal plans

Ingredients:
1 cup Arugula or Mixed Greens
¼ medium Onion, thinly sliced
¼ small Pomegranate, seeded
½ small Honeycrisp Apple, chopped
1 Tbsp Apple Cider Vinegar
1 tsp Dijon Mustard
1-2 drops Maple Syrup Extract
Ground Pepper, to taste

Preparation:
Combine the apple cider vinegar, dijon mustard and maple syrup extract in a small bowl. Drizzle over arugula, onion, pomegranate and honeycrisp apple. Toss until evenly coated. Add pepper to taste.
