Cumin, mint, cilantro and lime boost the flavors of this colorful salad!
Herbed Cauliflower Salad with Lime
Servings:
3 Vegetables
Suitable for all Freedom meal plans and FastTrack 2.0 only
Ingredients:
2 Tbsp juice from a fresh Lime
1 tsp Lime zest
½ tsp Cumin, ground
1 cup Cauliflower florets
1 cup English Cucumber, diced
½ medium Red Bell Pepper, diced
1 cup fresh Parsley leaves
1 cup fresh Mint leaves
1 cup fresh Cilantro leaves
1 Shallot, minced
¼ tsp Crushed Red Pepper Flakes (optional)
Preparation:
To make the dressing, combine lime juice, zest, and cumin in a small bowl. Set aside.
Using large holes on a box grater, grate cauliflower into large mixing bowl. Add cucumber, bell pepper, parsley, mint, cilantro, shallot, and red pepper flakes. Pour dressing onto the vegetable and herb mixture, mixing well. Transfer to a serving bowl serve immediately.
