Basil Salmon Parchment Packets

Ingredients:
1 serving of Salmon Fillet (or other plan approved fish)
1 clove Garlic, minced
¼ cup fresh Basil leaves, chopped
Juice from a fresh Lemon, to taste
Lemon slices
Unflavored Non-Stick Cooking Spray
Ground Black Pepper, to taste
Preparation:
Preheat the oven to 400 degrees F. Mix the basil and garlic in a small bowl.
Place fillet skin side down on a large piece of parchment paper and make 2-3 slits into the fillet with a knife. Stuff the slits with the basil and garlic mixture. Spray the fillet with unflavored non-stick cooking spray and arrange the lemon slices on top of the fillet.
Fold the edges of the parchment paper several times to create a sealed pocket. Place this on a baking sheet and bake in the preheated oven for about 20-25 minutes (or until the fillet flakes easily) on the bottom rack.
Cut open the parchment paper and remove the lemon slices. Season to taste with ground black pepper and fresh juice from a lemon.
