Greek Chicken Meatball Gyros

Ingredients:

Meatballs
1 serving Ground Chicken or Ground Turkey
¼ medium Onion chopped
1 small Tomato diced
1 cup Lettuce shredded
1 package MWLC Cream of Chicken Nutritional Supplement
¼ tsp Black Pepper, plus more to taste
2 Tbsp Parsley, chopped
1 Tbsp fresh Mint, chopped
Dried Oregano
2 pieces Melba Toast crushed into crumbs
½  Whole Wheat Pita bread
Unflavored Non-Stick Cooking Spray

Tzatziki Sauce
½ medium Cucumber, peeled and diced
4 oz. Plain Greek Yogurt
2 cloves Garlic, minced
2 Tbsp fresh Dill
1 Tbsp fresh squeezed Lemon juice
¼ tsp Black Pepper

 

Preparation:

Meatballs:
Place ground chicken or ground turkey in a medium-sized bowl. Add onions, melba toast, MWLC Cream of Chicken Nutritional Supplement, pepper, parsley, oregano and mint, along with a little water to help the ingredients stick together.  Knead the contents of the bowl with your hands, until well-combined.  Chill 30 minutes.

Shape the meat mixture into one long, flat meatball.  Set on a platter.

Heat grill to medium heat , spray well with unflavored non-stick cooking spray. Place meatball on the grill; cook 8-10 minutes, turning once.

Tzatziki Sauce:  Place cucumber in a colander; press out excess water with paper towel. Place cucumbers in a bowl, add all ingredients, and stir well.

Add one meatball serving, lettuce, tomato and spoonful of Tzatziki sauce to the inside of 1/2 of a Whole Wheat Pita and enjoy!
