Lemon Roasted Mixed Vegetables

Delicious! Serve this with your favorite lean protein. If you prefer a little spice, add a dash of red pepper flake.

Lemon Roasted Mixed Vegetables

2 Vegetables

Ingredients:
½ cup Cauliflower florets
½ cup Broccoli florets
1 clove Garlic, thinly sliced
¼ medium Red Bell Pepper, diced 1-inch
½ cup Zucchini, diced 1-inch
Unflavored Non-Stick Cooking Spray
1 tsp dried Oregano, crushed
1 tsp Lemon zest 
Red Pepper Flakes, to taste (optional)
Lemon wedges to serve

Preparation:
Preheat oven to 425 degrees F.

Combine cauliflower, broccoli and garlic in a 15x10 inch baking pan. Spray with unflavored non-stick cooking spray, sprinkle with oregano.  Stir to coat, then roast for 10 minutes.

Add bell pepper and zucchini to the vegetables in the pan, stirring to combine.  Roast until the vegetables are crisp-tender and lightly browned, 10 – 15 minutes more.

Sprinkle lemon zest over the cooked vegetables; stir and serve.
