Peach season is almost here - what do you do with your peach harvest? Make Peach Cobbler, of course! Enjoy this healthy treat, another delicious recipe courtesy of Rene from Grosse Pointe clinic!
Peach Cobbler

Ingredients:
3 MWLC Pancake Mix
3 MWLC Cinnamon Cereal
1 1/2 cup frozen Peaches (or 6 small fresh Peaches)
3 packets of Stevia
Water
Preparation:
Defrost the peaches (or rinse and thinly slice fresh peaches) and mix with 3 packets of Stevia. Place the peach mixture in an 8x8 glass cooking dish and cook in the microwave for 3-4 minutes or until tender.
Prepare the pancake mix according to package directions with water. Add 2 ounces of extra water if you prefer a thinner batter. Crush 2 packages of cereal and add to the pancake mix. The third bag can be crushed and saved for topping.
Pour the batter over cooked peaches and cook in the microwave for 3 minutes. Sprinkle the remaining crushed cereal over the top and continue to microwave for another 2-3 minutes, or until an inserted knife comes out clean. Slice into 6 servings and serve warm!
