Vegetarian Mexican Salad

🎉 Happy Cinco de Mayo! 🎉 Enjoy the day (and your menu)!  Our Vegetarian Mexican Salad will add the burst of flavor you're craving!

Servings: 1 Vegetable 1 Starch *Suitable for Fast Track Patients


Dressing: Juice from 1 Fresh Lime 2 tsp. Apple Cider Vinegar 1/4 tsp. Chili Powder 1/8 tsp. Cumin 1/8 tsp. Paprika 1/8 tsp. Garlic Powder 1/8 tsp. Onion Powder 

Salad: 1/4 cup cooked Quinoa 2 Tbsp. chopped Cilantro, divided 5 Cherry or Grape Tomatoes, halved


Dressing: Whisk all the ingredients together in a medium bowl.

Salad: In the dressing bowl, lightly mix together the cooked quinoa and dressing. Add in cilantro, tomatoes and the chicken. Toss all ingredients together.

Tropical Orange Razzy Margarita

Kick back and relax this Cinco de Mayo with a Tropical Orange Razzy Margarita! 🍹

Servings: 1 Nutritional Supplement

Ingredients: 1 Diet Orange Pop 1 MWLC Lemon Razzy Nutritional Supplement 3 packets Stevia 2 Tbs. Fresh Lime Juice

Preparation: Open the 3 packets of Stevia and pour them onto a paper plate. Find a decorative drinking glass. Wet the rim of your glass with a fresh cut lime. Dip the rim of the glass into the stevia until the rim of the glass is covered. Pour the rest of the stevia into the glass. Next, pour the diet orange pop into the glass with the leftover stevia. Open the packet of lemon razzy and empty the packet into the glass of pop. Mix all ingredients together gently. Add 2 Tbs. of fresh lime juice. Lastly cut a wedge of lime, slice the center of the lime, and place the lime on the rim of the glass. Enjoy!

Your diet doesn't have to be a bust because you're hosting a party. This Mock Guacamole is the perfect dip to add to your Cinco de Mayo menu and keep you on track!

Mock Guacamole

3 Vegetables


1 cup uncooked Asparagus, trimmed
1 Tbs. Fresh Lime Juice
1/4 cup Cilantro, coarsely chopped
1/4 medium onion chopped
1/4 medium Jalapeno Pepper, minced
1 small Tomato, chopped
1 medium Garlic Clove, minced
1/8 tsp. black pepper, to taste

Bring large pot of water to boil.  Add asparagus and cook until tender, about 10 minutes. Drain.  Place asparagus into food processor and puree until smooth.  Stir in remaining ingredients and serve.
