Cajun Shrimp Quinoa Casserole

Just in time for Mardi Gras or just because you are in the mood for something warm and tasty with a spicy kick!

Cajun Shrimp Quinoa Casserole

1 Protein
2 Vegetables
1 Starch
1 Nutritional Supplement

Suitable for all Freedom and FastTrack meal plans

 

Ingredients:
1 serving of Shrimp, peeled and deveined
1 small Tomato, cut into chunks
¼ medium Jalapeno, seeded and chopped
¼ medium Onion, chopped
1 clove Garlic, minced
1 packet MWLC Cream of Tomato Soup Nutritional Supplement
¼ tsp Chili Powder
¼ tsp Garlic Powder
¼ tsp Onion Powder
¼ tsp Oregano
¼ tsp Thyme
¼ cup Quinoa, cooked
Fresh Cilantro
Unflavored Non-Stick Cooking Spray

 

Preparation:
Mix all of the dry seasonings together, toss the shrimp and 1 tsp of the seasoning together, set aside.

 Toss the tomatoes with 1 tsp seasoning mixture, set aside.

Spray a cast iron skillet with Unflavored Non-Stick Cooking Spray (or any oven-safe skillet.) on medium heat cook the shrimp until opaque, about 2-3 minutes per side. Remove from the pan and set aside.

Saute the onion, jalapeno and garlic. Cook until the onion and jalapeno are tender, stirring often. Mix in the quinoa, and MWLC Tomato Soup Nutritional Supplement , 1 tsp seasoning and tomato chunks. Top with the shrimp. Place in the oven and bake at 350 for 15 minutes.

Garnish with fresh cilantro and serve.
