Chilled Lobster Salad Lettuce Wraps

Servings:

2 Vegetables
1 Starch

Ingredients:
¼ cup Corn, cooked
1 portion Lobster meat, cooked and chilled
5 Cherry Tomatoes, sliced in half
2 tsp Chives, chopped
1 fresh Lemon, juiced
Ground Black Pepper to taste
2 Romaine Lettuce leaves, rinsed and dried

Preparation:
Place lobster in a large pot of boiling water and cook 10-12 minutes until lobster is a bright vivid red color, set aside to cool then chill in refrigerator for 20 minutes.

Cook corn, drain and set aside to cool.

Chop chilled lobster meat from tails and claws into large bite sized chunks; add to the bowl.

Add corn, tomatoes, chives, lemon juice and fresh cracked pepper toss to combine.

Place lettuce leaves on plate and top with lobster salad.
