Lobster Salad with Blueberries

Seafood lovers rejoice! This can be made ahead and you can substitute the Lobster with Crab if you’d like.


Lobster Salad with Blueberries

Servings:
1 Protein
2 Vegetables
1 Fruit 

Suitable for all Freedom and FastTrack meal plans

Ingredients:
1 serving Kraft Light Zesty Italian Dressing
¼ medium Yellow Onion, minced and sprinkled with a pinch of garlic powder
Pinch of ground black pepper
2 cups torn Romaine Leaf Lettuce
2/3 cups fresh Blueberries
¼ medium Red Onion, slivered
1 tsp fresh Tarragon, chopped
1 portion Lobster meat or Crab meat, cooked

Preparation:
Combine 1 serving of the Kraft Light Zesty Italian dressing, ¼ yellow onion with garlic powder and pepper in a blender. Puree until smooth.

Toss lettuce, blueberries, red onion and tarragon with half the dressing mixture in a large bowl. Gently mix lobster (or crab) with remaining vinaigrette add to salad.
