The broccoli and onion can also be roasted in the oven first at 350 degrees for about 30 minutes or until tender.

1 Fruit
1 Dairy

Suitable for all Freedom meal plans except 4D and 5

Ingredients:
1 serving Plain, Low-Fat Yogurt
1 Tbsp Apple Cider Vinegar
1 serving Stevia
¼ tsp Ground Black Pepper
1 cup Broccoli florets
¼ medium Red Onion, diced
Arils (seeds) from ½ small Pomegranate
1 serving Boston Lettuce or Romaine Lettuce Leaves

Preparation:
In a medium bowl, stir together the yogurt, vinegar, stevia, and pepper.  Stir in the broccoli, pomegranate and onion.  Spoon into lettuce leaves and serve.
