Lemon Pepper Shrimp Kabobs

Shrimp Kabobs

Ingredients:
1 serving Shrimp, peeled and deveined
1-2 cloves Garlic, minced
2 tsp. juice from fresh Lemon
1 tsp. fresh Parsley, chopped
¼ tsp. Black Pepper, fresh ground
Unflavored Non-Stick Cooking Spray

Preparation:
If you use wood or bamboo skewers, soak them in water in advance to prevent them from burning when cooking. Metal skewers can be used as well.

Rinse and dry the shrimp. In a resealable bag, combine garlic, lemon juice, parsley and pepper. Add the shrimp, making sure all are coated with the marinade. Seal the bag, removing the excess air. Marinate in the refrigerator for 2-4 hours.

Preheat your grill to a medium heat. Remove the shrimp from the marinade. Lightly coat the skewers with the unflavored non-stick cooking spray and add the marinated shrimp to the skewers (5-6 depending on your skewers). Spray the skewered shrimp with the cooking spray and cook on the grill until the shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.
