Cilantro Lime Shrimp Kabobs

Ingredients:
1/3 cup fresh Cilantro, chopped
1 tsp grated Lime zest
¼ cup juice of a fresh lime
½ Jalapeno Pepper, seeded and minced
Unflavored Non-Stick Cooking Spray
1 Garlic clove, minced
¼ tsp Ground Cumin
¼ tsp Black Pepper
1 serving uncooked Shrimp, peeled and deveined
Lime slices
Preparation:
Set aside lime slices. Mix all ingredients and combine with the shrimp. Let stand 15 minutes.
Thread shrimp and lime slices onto metal or soaked wooden/bamboo skewers. Grill covered, over medium heat until shrimp turn pink, 2-4 minutes per side.
