Cucumber Tomato Salad

Ingredients:
½ medium Cucumber, peeled, halved and thinly sliced
1 small Tomato, chopped
½ medium Red Onion, chopped
1 clove Garlic, minced
1 Tbsp Lemon Juice, fresh
1 Tbsp Apple Cider Vinegar
1 tsp dried Italian Seasoning (Oregano, Basil, Rosemary, Thyme)
½ tsp Ground Pepper
Pinch of raw Stevia

Preparation:
Place cucumber, tomatoes, onions and garlic into a bowl. Toss with lemon juice, apple cider vinegar, Italian seasoning, pepper, and stevia.

Let stand for a bit at room temperature or in the fridge, about 15–30 minutes before stirring and serving.
