Curried Tofu Spinach Scramble

Ingredients:
Unflavored Non-Stick Cooking Spray
1 serving Tofu, crumbled
1 tsp Curry Powder
1 small Tomato, diced
1 cup Spinach
½ medium Onion, diced
Preparation:
Heat a medium sized skillet over medium to medium-high heat. Spray pan with unflavored non-stick cooking spray and add tofu and curry powder, stirring frequently.
Move the tofu to one side of the pan and add the onion, tomatoes and spinach to the other side. Cook until tomatoes start to wilt and onion becomes translucent.
Gradually add spinach to the pan, stirring tofu and vegetables together until the spinach is wilted.
