Salmon Skewers with Lemon-Cilantro Drizzle

Salmon Skewers with Lemon-Cilantro Drizzle

Ingredients:
Unflavored Non-Stick Cooking Spray
¼ cup fresh Cilantro, finely chopped
2 Tbsp juice from a fresh Lemon
½ tsp Lemon zest
1 serving center-cut Salmon, cut into 1-inch cubes
Black Pepper

Preparation:
Soak bamboo skewers in water for 30 minutes before grilling.

In a small bowl, mix cilantro, lemon juice, and zest. Set aside.

Spray salmon with cooking spray and season salmon with pepper. Thread salmon skewers, using 2 skewers side-by-side with small gap (to stabilize fish on grill).

Preheat grill to medium-high. Grill salmon until opaque and flaky, about 5 minutes per side (safe internal temp 145 degrees F). Garnish with cilantro-lemon drizzle and serve.
