Shrimp Curry

Servings:
1 Protein
1.5 Vegetables
1 Starch
1 Nutritional Supplement 

Suitable for all Freedom and FastTrack plans.

 

Ingredients:
1 serving of Shrimp (peeled and de-veined)
¼ medium Red Bell Pepper
½ cup Zucchini, diced
2½ Green Onion, sliced
1 packet MWLC Cream of Chicken Nutritional Supplement
1 tsp. Chili Powder
1 tsp. Curry
1 tsp. Garlic Powder
½ tsp. Cumin
½ tsp. Turmeric
Unflavored Non-Stick Cooking Spray
¼ tsp. Cilantro, fresh
Lime wedge
1 serving cooked Long Grain Brown Rice, Whole Wheat Pita or Soba Noodles 

Preparation:
Sautee shrimp with vegetables in a pan sprayed with unflavored non-stick cooking spray.  Once cooked half way, add 6oz water and 1 packet of MWLC Cream of Mushroom and stir.  

Add all dry seasonings and simmer on low for 10-15 minutes. Garnish with cilantro and lime.  Serve while hot.
