Red Pepper and Tomato Soup
Suitable for Fast Track Patients
1/2 Medium Red Bell Pepper, seeded and chopped
1/4 Medium Onion, chopped
1 Small Tomato, chopped
1/2 Garlic Clove, chopped
1/2 tsp. Fresh Thyme Leaves
Fresh Ground Black Pepper to taste
Place onion and bell pepper in a saucepan and sauté over medium heat for 5 minutes. Add garlic and thyme and cook for 1-2 minutes, then add tomato and cook covered for 5-10 minutes. Puree the mixture as a soup and season with pepper.
