Ranch Dressing:

Ingredients:
4oz. Plain Low Fat Greek Yogurt
1 fresh Garlic clove, minced
1 Tbsp fresh Lemon juice
1 Tbsp fresh chopped Chives
1 Tbsp fresh chopped Parsley leaves
a pinch fresh ground Black Pepper

 

Preparation:
Mix all ingredients together and serve over your favorite salad greens.

Light Vinaigrette

Our Light Vinaigrette recipe can be easily modified by adding garlic, basil, oregano, thyme, dill or tarragon.

Light Vinaigrette

Ingredients:
1 packet Stevia
¼ tsp Dash (any flavor)
1/8 tsp Dry Mustard
Pepper to taste
¼ cup water
2 Tbsp Apple Cider Vinegar or fresh Lemon Juice

 

Preparation:
In a re-sealable jar, combine all ingredients and shake until well blended.  You may store in the refrigerator for up to 2 weeks.  This makes 2 servings; 2 tablespoons each.

Recipe can be modified by adding 2 minced garlic cloves, or ¼ tsp of dried tarragon, basil, oregano, thyme or dill weed.

Ingredients:
6 Tbsp Paprika
3 Tbsp Mint, dried
2 Tbsp Cinnamon, ground
2 Tbsp Garlic Powder
1 Tbsp Cumin Seed, coarsely ground
2 tsp Black Pepper
1 tsp Cloves, ground


Preparation:
Combine paprika, mint, cinnamon, garlic powder, cumin, pepper and cloves in a small bowl. Stir well to recombine after storing.


This can be made ahead and stored airtight at room temperature for up to 3 months.


To make a vinaigrette with the spice mix: Combine 2 Tbsp. dry mix with 1/3 cup red-wine, white-wine or cider vinegar and 2 Tbsp. water in a glass jar with a tight-fitting lid. Shake until well combined. Refrigerate for up to 5 days.

Preparation:

Chicken Fruit Salad with Yogurt Curry Dressing

Servings:
1 Protein
1.5 Vegetables
1 Fruit
1 Dairy
1 Fiber

Ingredients:
1 serving Boneless Skinless Chicken Breast
6 oz. Plain Low Fat Yogurt
1 Tbsp Light Mayonnaise
½ tsp. Curry Powder
½ small Apple (chopped, unpeeled)
1/3 cup fresh Pineapple
½ cup Celery (diced)
¼ medium Red Onion (minced)
2 cups of Endive
1 MWLC Chicken Bouillon Fiber Fulfill
1 cup Water

Preparation:

Directions for dressing:
In a small bowl mix together the yogurt, light mayonnaise and curry powder with a whisk and set aside.

Directions for salad:
In a sauce pan over low heat add MWLC chicken bouillon packet, water and chicken breast and simmer for 10 minutes. Remove pan from heat and let chicken sit in bouillon for 20 minutes or until no longer pink in the middle. Allow chicken to cool on cutting board for 5-10 minutes.

Once cooled cut chicken into ¼ inch cubes. In a large bowl mix together the apple, pineapple, celery, red onion and dressing toss to coat evenly. Add the endive and chicken toss again to mix all ingredients together.

¼ cup Quinoa, cooked
¼ medium Onion, diced

1 small Tomato, chopped

Cilantro Lime Dressing
1 serving Plain Greek Yogurt
¼ cup Lime juice, fresh
¼ cup Cilantro
2 cloves Garlic, finely minced
¼ tsp. Cayenne Powder
Dash of Red Pepper Flakes (optional)

Preparation:
Combine dressing ingredients to a small bowl. Add the cooked quinoa, onion, peppers and tomato, stir thoroughly and chill for 30 minutes.

1 tsp. Red Pepper Flakes or a 1/2 tsp. if you do not like it spicy
½ tsp. Onion Powder

Preparation:
Combine all ingredients in a small mixing bowl and use as much as needed for your salad or your low carbohydrate tortilla wrap.

Broccoli Dip

Servings:
1 Vegetable
1 Dairy

Suitable for all Freedom meal plans only

Ingredients:
1 cup Broccoli
1 cup Plain, Low-Fat Yogurt
2 tsp. Dill Weed (dried or fresh)
Onion Powder and Garlic Powder to taste
Pinch of Cayenne and Smoked Paprika

Preparation:
Steam broccoli until tender and dice finely. Let broccoli cool and then mix with all other ingredients. Serve cold.


Tzatziki Dip

Servings:
2 Vegetables
1 Dairy

Suitable for all Freedom meal plans only

Ingredients:
½ medium English cucumber, finely chopped
1 serving Non-Fat Greek Yogurt, plain
1 Tbsp. Lemon Juice, fresh
3/4 tsp. Garlic Cloves, minced
½ tsp. Dill Weed
1 tsp. Apple Cider Vinegar
1 tsp. Black Pepper
Lemon Zest, grated
¼ cup Celery
2½ medium Radishes
¼ cup Carrots

Preparation:
In a medium mixing bowl, combine all ingredients, the yogurt, black pepper, finely chopped cucumber, apple cider vinegar, garlic cloves, dill weed, lemon juice, and lemon zest. Stir all ingredients together and refrigerate for 2-3 hours for flavor to develop. Use carrots, celery and radishes to dip with. Enjoy!
